Ingredients

  • 1 cup / 135g sunflower seeds
  • ½ cup / 90g flax seeds
  • ½ cup / 65g hazelnuts or almonds
  • 1 ½ cups / 145g rolled oats (certified gluten-free if needed)
  • 2 Tbsp. chia seeds
  • 4 Tbsp. psyllium seed husks (or 3 Tbsp. psyllium husk powder)
  • 1 tsp. fine grain sea salt (or 1 ½ tsp. coarse salt)
  • 1 Tbsp. maple syrup (or a pinch of stevia for sugar-free)
  • 3 Tbsp. melted coconut oil or ghee
  • 1 ½ cups / 350ml water

Instructions

  1. In a flexible, silicone loaf pan, combine all dry ingredients and stir well to combine.
  2. In a measuring cup, whisk together maple syrup, oil, and water.
  3. Pour the wet ingredients into the dry ingredients and mix thoroughly until everything is completely saturated and the dough becomes very thick. If the dough is too thick to stir, add water one teaspoon at a time until manageable.
  4. Smooth the top of the dough with the back of a spoon.
  5. Let the dough sit on the counter for at least 2 hours, or longer (all day or overnight). To check if it’s ready, the dough should hold its shape even when you gently pull the sides of the loaf pan away from it.
  6. Preheat oven to 350°F / 175°C.
  7. Place the loaf pan on the middle rack of the oven and bake for 20 minutes.
  8. Remove the bread from the loaf pan and place it upside down directly on the oven rack.
  9. Bake for another 30-40 minutes, until the bread sounds hollow when tapped.
